Best Vegan Foods In Replace Of Milk

How do you get your calcium?" Is a common question when you telling some one new that you are vegan and don’t consume dairy products. Actually, contrary to popular belief, many non-dairy foods contain calcium, and pasterized and homogienized milk actually has relatively a very low amount. We have been  misled into believing that milk does our body good. Yes, producers market it as being a good source of calcium, Vitamins A and B, carbohydrates, potassium, magnesium, phosphorus, and protein. However there is a whole other side to milk that we aren’t so openly told about.
For starters, milk also contains 59 active hormones, a laundry list of allergens, fat, cholesterol, herbicides, pesticides, dioxins, antibiotics, blood, pus, feces, bacteria, and tons of viruses. Now I realize that I probably just really grossed you out, but it was necessary to make my point. Besides, this doesn’t even begin to scratch the surface
What’s more interesting is that it is the magnesium in plants that cows eat which allows them to absorb calcium. However, the cows milk doesn’t have enough magnesium to enable humans to absorb any significant amount of that calcium. In fact, it only has enough magnesium to enable us to absorb 11 percent of the calcium. Thus, milk is a useless source of calcium. Next, milk protein leaches the calcium from the body. So whatever calcium was absorbed from the milk is consequently extracted by the protein. So I ask, what is the point of drinking milk?

Here are calcium rich  foods you can eat in replace of milk :
Leafy Greens
Collards, kale, mustard greens and turnip greens all are excellent sources of calcium. An eight-ounce glass of milk has 300 mg of calcium, whereas a cup of collard greens boasts almost 350 mg of calcium--more than a cup of milk. Regularly include leafy greens as part of your lunch and dinner. Leafy greens are also great sources of antioxidants and other nutrients.

Vegetables
Many vegetables are calcium powerhouses. People who eat several servings of vegetables per day may not realize that they're getting as much calcium as they are. For example, a cup of broccoli has 94 mg. Turnip greens are also impressive, with 249 mg per cup. Cooked kale and okra both have around 179 mg per cup. If you enjoy cabbage, a cup of bok choy has 158 mg. Include these veggies as part of your dinners, since other vegetables contain significantly less calcium than these.

Soy Products
Many soy products contain high calcium levels. The best calcium-rich soy products are calcium-set tofu, soy beans, soy nuts, soy yogurt and tempeh. One half-cup serving of firm tofu contains about 227 mg of calcium or about 22% of the RDA.  The amount of calcium in tofu depends on the coagulant used to make it. Read the label when you buy tofu to verify the calcium level. Combine soy products like tofu or tempeh with broccoli and kale to make a calcium-rich stir-fry.

Beans,Seeds and Nuts

Beans, nuts and seeds are also good sources of calcium, though not as good as soy products and leafy green vegetables. If you grab a handful of almonds as an afternoon snack, you'll get 188 mg for a half cup. Trading in your peanut butter for almond butter will give you 86 mg in two tbsp. Tahini, a common ingredient in hummus, has 128 mg in two tablespoons. The average one cup serving of cooked beans has about 90 mg. of calcium in addition to being packed with protein and fiber.
Sesame seeds and sunflower seeds other souces high levels of calcium. Keeps these around as a snack, or use them to top salads or grain dishes.

Calcium-Fortified Drinks
Eight ounces of calium-fortified soy milk or juice contains the same amount of calcium as a glass of milk. Be sure to select calcium-fortified drinks at your grocery store.

Almond Milk

Almond milk is a great substitute for milk in every aspect of cooking and baking as well as over cereal or in your morning coffee. Creamy, usually just a little sweet and high in vitamin E and other essential nutrients, almond milk is almost always found in with the other non-refrigerated boxed beverages. These dairy-free milk alternatives are usually not soy-free however, as they almost always contain soy lecithin. While there are many varieties of almond milk available, the brand that I like the best is Blue Diamond's Almond Breeze, and I usually purchase the Original Unsweetened Variety, though the others I have tried have been tasty as well.
Coconut Milk Beverages
In the past few years, the public has been made more and more aware of gluten and soy allergies as well as allergies to dairy, and so coconut-based products that are soy-free, gluten-free and dairy-free have been making their way onto grocery shelves more and more. Turtle Mountain, the manufacturers who make some of my favorite dairy-free ice creams, also make my favorite coconut-based milk substitute, So Delicious Coconut Milk. So Delicious Coconut Milk is great in cooking and baking, and it's my preferred dairy-free milk substitute when I want to drink it straight from the glass

Coconut Milk

Prepared from fresh coconut meat, coconut milk is a great option for richer dairy-free dishes. Although it is high in fat and saturated fat, coconut milk is a delicious way to add creaminess to any number of dairy-free and vegan dishes, from curries to pasta sauces to puddings to dairy-free whipped cream. I've tried zillions of coconut milks over the years, but my pick for the best, accessible coconut milk on the market is Thai Kitchen's Coconut Milk both the lite and original varieties.

Rice Milk

Rice milk is generally thinner in consistency than nut milks or soymilk, and it has a lighter, sweeter flavor that is perfect for using with cereal or in coffee. While rice milk works well in baking recipes, for using in dairy-free sauce recipes it generally requires some sort of binding or stabilizing agent such as agar flakes, flour or xanthan gum.

After trying many different varieties, the brand I use almost exclusively is Rice Dream Enriched Original in shelf-stable or refrigerated varieties.

Soy Milk

Soymilk is one of the richest of non-dairy milk alternatives next to coconut milk, contributing density through fat, fiber and protein while still free of cholesterol and saturated fats. Excellent for baking, cooking, in a glass or over cereal, soy milk is an easy way to add protein and dimension to your recipes, and it is the milk alternative I prefer for preparing dairy-free sauces, as it remains more stable at higher temperatures. 

For baking, I prefer to use Westoy's Organic Unsweetened Soymilk, but for making sauces, I like using Silk's Plain Soymilk as it has added carrageenan that acts to further stabilize the liquid.For lattes or other coffee beverages, Pacific Natural Foods makes a soy milk intended for professional use.
